How to Make Lemon Cheese

It’s time for you to see just how easy making cheese at home can be. The seven minute video above takes you through the process from ingredients and kit, to making the curds and whey, before finally crafting your cheese.Using only milk, lemons and some basic kitchen equipment, you can have cheese in about an hour.

The ingredients are:

  • 1ltr or 2pints of milk (whole is best as you’ll get most cheese – about 200g – but you can use skimmed, semi-skimmed or even UHT with this recipe)
  • The juice of 2 lemons, about 6 tablespoons.

Don’t worry about loads about the measurements as this recipe is about simplicity and fun, the need for accuracy will come soon enough.

Heat the milk to 38C (which is about body warmth, so only very gentle heating required) and add the lemon juice. The acid in the juice will cause the casein protein to coagulate around water and fat in the milk, giving you curds sitting in a juice of whey.

Leave for about half an hour, then separate the curds from the whey using a sterilised tea towel, cheese cloth or butter muslin inside a colander. Leave to drain for another hour or so and inside your muslin you’ll have a genuine cheese – go you!

Scrape it into a storage container and keep it in the fridge for up to a week (you’ll eat it before that!).
